Irresistible Peanut Butter Cookies

Cookie # 22 is:

Irresistible Peanut Butter Cookies
  


Preheat oven to 375 degrees
Line two cookie sheets with parchment paper

1 ½ cups firmly packed brown sugar
¾ cup creamy peanut butter
½ cup butter flavored Crisco
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 ¾ cups flour
¾ teaspoon baking soda
¾ teaspoon salt

Combine brown sugar, peanut butter, Crisco, milk and vanilla in a large mixing bowl. Beat well then add egg and mix well. Combine flour, baking soda and salt. Add gradually to peanut butter mixture. Drop by rounded teaspoonfuls 2 inches apart onto prepared baking sheets. Dip fork into sugar and slightly flatten cookie dough in a criss-cross pattern. (I'll admit that I was a little naughty and sprinkled sugar on the cookie before I baked it. I also added chocolate chips to the dough after I baked some plain ones. Delicious as well!)

Bake for 7 – 8 minutes or until cookies just begin to brown and set.

Makes about 3 dozen cookies
