Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Don't you just love a good brownie? They're just so....good. I love them plain but when you step out of the box and jazz them up then I love them even more. I made these the other day and they sure didn't last long, but boy are they rich! I gave one to my brother who loves sweet treats and it even took him two days to eat one. He said they were delicious but it was hard to eat the whole thing. I can't decide if that's a bad thing or not. I think they end result is this: cut them small for a decadent treat and then you have enough to last for a while!

Peanut Butter and Ganache Brownies

1 brownie mix – or your favorite recipe

Bake brownies according to package directions or make your favorite recipe. I baked mine in an 8x11 inch baking pan. While the brownies are baking, make the peanut butter layer. Allow baked brownies to cool for about 15 minutes. Then spread the peanut butter layer on top.

Peanut butter layer:
1 cup creamy peanut butter
3/4 cup unsalted butter, at room temp
2 teaspoons vanilla
3 cups confectioners’ sugar, sifted
2 - 3 tablespoons milk
Cream peanut butter and butter together until well mixed. Add the vanilla, sugar and enough milk to make a spreading consistency. Spread on top of warm brownies.

Ganache layer:
1 cup cream
2 cups chocolate chips
Heat cream in a small saucepan. Do not boil. Add chocolate chips and allow to sit for a few minutes. Stir to combine making sure ganache is smooth. Gently pour chocolate mixture over peanut butter layer. Allow to cool completely before cutting.

Serves 12

Here's whatcha need. See that bowl of "stuff"? That's the peanut butter mixture.
I had some left over from another recipe so I didn't set out all the ingredients to
include in the picture. But hey...it ain't rocket science. You guys are smaht, aintcha?

Our brownies all baked. This is a boxed mix but feel free to use your own recipe.

I heated the peanut butter mixture until it was nice and smooth so it would
spread easier.

See?

The warm cream and chocolate chips...

Stir it up until it's nice and smooth.

Then pour that over the brownie/peanut butter mixture.

Smooth as glass!
