Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Taco Soup

Another recipe from my mom’s binder! Every now and then I like to go through it and find recipes. There’s always something I’ve overlooked. And this taco soup is one of those. I’ve heard her talk about how good it is…and I don’t know why I’ve never made it. She has the recipe photocopied, along with three other recipes on one piece of paper then tucked into her binder. If you’ve got a mom with a recipe box or binder, go check it out! You just never know what you might find!

Taco Soup

1 pound ground beef
1 large onion – diced
3 16-ounce cans chili beans - undrained
1 16-ounce can whole kernel corn - undrained
1 16-ounce can chopped tomatoes – undrained
1 15-ounce can tomato sauce
1 ½ cups water
1 4.5-ounce can diced green chilies
1 1 ¼ -ounce package taco seasoning mix
1 1-ounce envelope Ranch dressing mix

Brown ground beef with onion until browned and done. Add the rest of the ingredients and simmer about an hour.

Serve with tortilla chips, salsa, sour cream, cheese and tomatoes and any other taco fixin's you like!

This is so easy. Throw all this stuff in a pot and cook it! (I left the water out of the picture but it's in the mix with everything else!)
