Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. There's a Mexican food restaurant here that serves these tacos. IT Guy is a BIG fan of them because of the chorizo. I'm not real fond of chorizo but I thought I'd give them a try. He LOVED them! While not tasting exactly like the ones in the restaurant, he said he they were very good. I can't vouch for that because I skipped the chorizo on my tacos but just the flank steak was yummy on it's own! So either way...these tacos SCORE! 

Two Meat Tacos


1 pound flank steak – seasoned and grilled (I just used Lawry's Seasoning Salt)
1 pound Chorizo sausage – cooked and drained
½ an onion – diced
½ cup fresh cilantro – chopped
1 dozen flour tortillas

Slice cooked flank steak across the grain into strips, then cut across the strips into 1 inch pieces.

On a warm flour tortilla, place a scoop of steak, a spoonful of Choriza, a sprinkling of diced onions and some cilantro.

Add cheese and salsa, if desired.



 
Here's the stuff you'll need for these tacos.


 
Grill up the flank steak and fry up the chorizo.


 
Dice the onions and chop up some fresh cilantro.


 
Then assemble the tacos. Add salsa and 
cheese if you want...serve on warm flour tortillas!
