Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Another hot day in the south calls for another stove top meal! As much as we love pizza, I figured this would be a fun twist on an old favorite. Make sure you use a good thin sliced french bread. Leave the sugar out of the sauce if you don't car for it on the sweet side...or use a canned sauce if you're running short on time! Either way..this is fun and kid-friendly!

Grilled Cheese & Pepperoni Sandwiches 
with Pizza Dipping Sauce


French bread ~ thin sliced
Mozzarella cheese slices
Cheddar/Jack cheese slices
Pepperoni bites

Butter one side of a piece of bread then add a piece of mozzarella and a piece of cheddar/jack cheese. Sprinkle on some pepperoni bites. Top with two more slices of cheese and the other piece of buttered bread. Grill on a medium heated pan until golden brown.


Pizza Dipping Sauce

Olive oil
2 tablespoons butter
2 cloves garlic ~ minced
1 shallot ` diced
1 can crushed tomatoes
2 teaspoons Italian seasoning
1 - 2 teaspoons sugar depending on sweetness desired
Salt and pepper to taste

Add olive oil to medium hot pan then add butter.

Cook shallots and garlic until done then add the rest of the ingredients. Simmer for about 15 minutes and serve with sandwiches.

Let's make some sandwiches!!
 

Drizzle some olive oil in a medium 
hot pan then add the butter.
 

Scoop in the diced shallots and the minced 
garlic and let in cook for a few minutes.
 

Add the rest of the sauce ingredients.
 

Buttah ya' bread!
 

Lay two pieces of cheese on the unbuttered 
side of a piece of bread. Then sprinkle on some 
pepperoni and top with more cheese. 
I used 4 slices...two mozzarella and two cheddar/jack.
 

Plop the sammies on a medium heated griddle. 
Not too hot...you don't want the outside 
done before the inside. 
Low and slow is the name of the game.
 

See how pretty and golden brown?
 

Slice the sammies in half and serve with the sauce!
