Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. One thing I know that makes my family happy is anything sweet. Knowing how much they love cinnamon rolls and cupcakes, I decided to combine the two for something fantastic. Wow...but these were good. I sent about a half a dozen to work with IT Guy and #1 son was none too happy about it. That meant less for him. It also meant less for me, which is a GOOD thing as far as I'm concerned. These little guys are out of this world!!!

Cinnamon Roll Cupcakes


1 box yellow cake mix
2 teaspoons cinnamon ~ divided use
1/2 cup brown sugar
1 8-ounce cream cheese
1 stick butter
1 teaspoon vanilla
milk
2 1/2 cups powdered sugar

Mix cake mix according to box directions for cupcakes with 1 teaspoon of cinnamon added to the batter.

Place cupcake liners in cupcake pan and fill liners a little less than half full with batter.

Mix 1/2 cup brown sugar and 1 teaspoon cinnamon together in a small bowl.

Sprinkle a heaping teaspoon of cinnamon mixture over cupcake batter.

Place a little more batter on top of brown sugar mixture.

Bake as normal.

For frosting:

In a mixer, beat cream cheese and butter together until smooth. Add vanilla and powdered sugar. Add a little milk to make frosting spreadable.

Pipe or spread frosting over cooled cupcakes and sprinkle with extra cinnamon.

put the powdered sugar in the pic!

Mix up the cake mix 
but add 1 teaspoon of cinnamon.

Combine brown sugar and the
 other teaspoon of cinnamon together.

Fill the cupcake liners less than half full 
then sprinkle in a heaping teaspoon 
of the cinnamon/brown sugar mixture on top.

Then top with more batter.

Bake 'em up and let 'em cool.

Beat the cream cheese and butter 
until smooth then add the vanilla.

Then add the powdered sugar and a little milk.

Frosting!!!

 
Frost your cooled cupcakes then eat 'em up!!
