Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Peach Cobbler


IT Guy and I were in AZ a while ago and one thing I did when I was there, was to do through all of my mother-in-law's recipes. For someone who's not a big fan of cooking, she sure had a LOT. It was so fun to see the recipes she'd cut out of magazines and newspapers....to see what appealed to her. But the one thing I enjoyed the most, was seeing the recipes she had hand written or typed out because I knew they must have been extra special for her to take the time to do that. Here's one that I knew I wanted to try the minute I saw it. Peach cobbler....because who doesn't love that, right?

Peach Cobbler



1 cup flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
4 cups peaches (fresh, frozen or canned)
1 teaspoon lemon juice
2/3 cup sugar
1 tablespoon flour
1/4 cinnamon
1/2 cup butter

Heat oven to 350 degrees. Spray a 9x13 inch pan with cooking spray.

In a medium bowl, combine the 1 cup of flour, 1 cup of sugar, baking powder and salt. Stir in the milk and set aside.

In a medium saucepan, combine the peaches, lemon juice, 2/3 cup sugar, 1 tablespoon of flour and the cinnamon.

Stir to combine ingredients and heat to just under boiling.

Melt butter and pour into the prepared 9x13 inch pan.

Pour heated fruit mixture over butter.

Pour batter mixture over fruit in pan.

Bake for 1 hour until golden brown on top.


Here's what you'll need.


Combine the 1 cup of flour, 1 
cup of sugar, baking powder and salt.


Then pour in the milk and stir. Set aside.


In a saucepan, combine the peaches, 
lemon juice, 2/3 cup sugar and the cinnamon.


Het to just under boiling.


Melt the butter and pour into a 9x13 inch pan.


Then pour in the batter mixture.


Then the fruit. I added blackberries to mine. 
Yummy! About two cups.


Then bake until golden brown. 
Serve with ice cream for more deliciousness.
