Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Skillet Queso Dip

WARNING: Look away if you're easily frightened. We'll be using processed cheese in this recipe.

We love salsas and dips around the SFFS. If we want a snack while watching a movie or something, we almost always go for chips and salsa. So I knew when I made this dip, that it would make my crowd happy. It can be easily doubled to feed a larger crowd, too!

Skillet Queso Dip



1 small onion ~ finely diced
1 clove garlic ~ minced
1 pound Velveeta cheese ~ cut into large chunks
1 16-ounce can chili (I used the one with no beans)

In a large skillet (I used my cast iron), saute the onions and garlic in a little olive oil until caramelized.

Add the Velveeta and the chili and simmer, covered, until cheese has melted and mixture is hot. Stir occasionally.

Serve with tortilla chips.
