Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Kielbasa & Chicken Gumbo

We love kielbasa around here. Do you ever use it? I love how it flavors the whole dish! I know that traditional gumbo calls for okra but the only way we eat okra here in the SFFS house, is fried. So I left it out of this recipe. But...it was so good anyway. You gotta try this! You gotta!


Kielbasa & Chicken Gumbo



1 pound Kielbasa sausage ~ sliced into "coins"
3 large chicken breasts ~ cooked and coarse shredded
1 large onion ~ diced
1 red bell pepper ~ large chunks
1 cup celery ~ sliced
2 garlic cloves, minced
2 teaspoons Cajun seasoning
1/8 teaspoon ground Cayenne pepper
1 48-ounce container chicken broth
1 cup long grain rice

In a large pot, saute the onion, celery and garlic until soft.

Add the sausage and cook until sausage has browned a bit.

Add the chicken broth, chicken, red bell pepper, Cajun seasoning, and Cayenne pepper.

Stir until combined and bring to a boil.

Add rice, cover and allow to simmer for 20 - 30 minutes until rice is done.

Season and cook the chicken.

Then shred it and set it aside.
